Coles launches Mum's Jam to support sick kids

To celebrate the launch of the new Coles Mum’s Jam we are excited to share two simple recipes with you that Aussie kids will love – not just because they are delicious but because 50c from every sale of Mum’s Jam supports Hospitals United for Sick Kids (HUSK).

Strawberry Jam Oatmeal Bars 

Ingredients: 

  • 1 cup rolled oats 
  • 1 cup almond flour (or whole wheat flour) 
  • 1/4 cup honey or maple syrup 
  • 1/4 cup coconut oil, melted 
  • 1/2 teaspoon vanilla extract 
  • 1/2 teaspoon baking powder 
  • 1/4 teaspoon salt 
  • 1/2 cup Coles Mum’s Jam 

Instructions: 

  1. Preheat the Oven: Preheat your oven to 175°C and line an 20x20cm baking pan with baking paper.
  2. Mix Wet Ingredients: In a bowl, combine the melted coconut oil, honey (or maple syrup), and vanilla extract.
  3. Combine Dry Ingredients: In another bowl, mix the rolled oats, almond flour, baking powder, and salt.
  4. Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Spread in Pan: Press half of the mixture into the bottom of the prepared pan. Spread the strawberry jam evenly over this layer, then crumble the remaining oat mixture on top.
  6. Bake: Bake for 20-25 minutes, or until golden brown. Let it cool before slicing into bars.
  7. Enjoy: These bars are great as a snack or breakfast option! 

Simple Scones with Jam and Cream

Ingredients: 

  • 2 cups all-purpose flour 
  • 1 tablespoon baking powder 
  • 1/4 teaspoon salt 
  • 1/4 cup sugar 
  • 1/2 cup unsalted butter, cold and cubed 
  • 3/4 cup milk (plus extra for brushing) 
  • 1 teaspoon vanilla extract (optional) 

To serve: 

  • Coles Mum’s Jam 
  • Thickened or whipped cream 

Instructions: 

  1. Preheat the Oven: Preheat your oven to 200°C and line a baking tray with baking paper.
  2. Mix Dry Ingredients: In a large bowl, combine the flour, baking powder, salt, and sugar.
  3. Add Butter: Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  4. Add Milk: Pour in the milk (and vanilla, if using) and mix gently until just combined. Be careful not to overmix!
  5. Shape the Dough: Turn the dough out onto a lightly floured surface. Pat it into a circle about 2.5cm thick. Use a biscuit cutter to cut out scones and place them on the prepared baking tray.
  6. Brush with Milk: Brush the tops of the scones with a little extra milk for a golden finish.
  7. Bake: Bake for 15-20 minutes, or until the scones are lightly golden.
  8. Cool: Allow the scones to cool slightly on a wire rack.
  9. Enjoy: Serve warm with Coles Mum’s Jam and cream.
